- Scrapbook Expo -

Yesterday us ladies returned from a weekend trip to Anaheim. We left Thursday evening and were up early Friday and off to the convention center to the Scrapbook Expo held there.

We shopped for quite a few hours before our first class.
The place was packed! It felt like Disneyland on Christmas Day.
But that sure didn't stop us from finding all of the great deals! ;-)

This was my pile of goodies from the first day. Believe me, I added to it the second day. ;-)

Before we left on Saturday we took a photo in front of one of my favorite blog/scrap designer's (Dear Lizzy) bike from her new scrapbook line. Too cute!

What an awesome ladies trip! I can't wait to go again!!

Black Bottom Cupcakes

Cream Cheese Mixture
8 oz cream cheese, softened
1/2 cup sugar
1 small banana, pureed
1 egg
1 teaspoon vanilla
8 oz. semisweet chocolate chips

Chocolate Mixture
1 1/2 cups all purpose flour
1/3 cup cocoa
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large bananas, pureed
1/3 cup oil
1 teaspoon vanilla

Preheat oven to 350 degrees.

For the cream cheese mixture:

  • Beat cream cheese and sugar until nice and fluffy.
  • Add banana, egg and vanilla and mix together until combined.
  • Stir in chocolate chips and set aside.

For the chocolate mixture:

  • Sift together flour, cocoa, sugar, soda and salt using a wire whisk.
  • Add bananas, oil and vanilla and mix together on low until combined.
  • Use a large scoop to fill cupcake liners with batter.
  • Repeat topping the cupcake batter with the cream cheese mixture.

Bake for about 30 minutes or until done.

Makes about 18 cupcakes.

Today Nate and I are celebrating our 6th year of marriage!! Boy, that went by fast!

I am SO thankful for my awesome hubby and the 10 years (come this September) that we have been together.

- Recipe Time -

My goal lately has been to change my eating habits.

After the holidays and our week cruise, and not being able to
get myself into most of my skirts, comfortably, I figured enough was enough.

I have been searching for healthy meals that are somewhat easy.
Like I have said before, I despise cooking dinner so normally I only cook something quick and easy.

A friend of mine posted this recipe on her Pinterest account and I immediately
re posted it to mine. It looks Delicious and what is even better? It only has
5 ingredients and is "healthy"! SCORE!


BUBBLE UP ENCHILADAS
Nutrition Info: Calories 390 | Fat 11.5g | Carbohydrate 36g | Fiber 2g | Protein 33g
Weight Watcher Recipes 6 points (old points)

1 pound ground turkey
1 (10 ounce) can enchilada sauce
1 (8 ounce) can tomato sauce
1 can reduced fat refrigerator biscuits
1 ¼ cups shredded low fat Mexican Cheese
Green onions to top it off

Preheat oven to 350 degrees. Brown turkey and drain if needed. Mix in a can of enchilada sauce. Cut the refrigerated biscuits into fourths and stir them in the meat mixture. Then you just dump it all in a greased casserole and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.

- Cruise -

It always amazes me how fast a weekend can go by. You look forward to it and then it quickly vanishes. That is exactly how last week felt.
We left on Sunday evening to spend the night with my parents. We were to meet my grandparents, my sister and her hubby early the next morning.

After stopping in Valencia for breakfast at Mimi's Cafe we finished our traveling to Long Beach where our cruise ship awaited us!

It was raining hard and absolutely freezing. I didn't pack or take any jackets, nor tights and I was suffering the consequences. Thankfully the longer lines were indoors where it was warmer.


After we dropped off some of our belongings in our cabins we all met on the upper deck (lido deck) to have some lunch. I was SO happy to see the soft serve yogurt and ice cream machine.
I ate WAY too many of those that week!
Our first stop was Catalina Island. I had never been, sad since it is right here in California, and I throughly enjoyed it. It was beautiful and I hope we can go back for maybe a weekend trip. The weather was perfect!


We rented two golf carts for an hour and explored as much of the island as we could. It felt like we were in Hawaii in some parts. It was so green, and gorgeous. I loved the fact that the main types of vehicles were golf carts. What a neat place to live/vacation!





While walking through their tiny post office we noticed a row of Pacific Bell original phone booths. They were so tiny and we were laughing just trying to both fit it one. :-)



The second evening was formal night. I was not really thrilled to dress up, since we do it three times a week, but we were able to get some nice photos of our group so I guess it was worth it.








The entire reason for the cruise was to celebrate my grandparent's 50th wedding anniversary. On formal night the waiters brought out a cake and we all sang "happy anniversary".
They are such a lovely couple. I am thankful for my precious grandparents.

No, we did NOT try this out, but doesn't it look like so much fun?!?!?

Our second and final stop was Ensenada, Mexico. We walked around town and shopped for a few hours. It was mainly souvenirs, so the only thing I purchased was a bottle of vanilla, the real stuff!



We had a lot of fun one day playing golf. Had quite a few laughs!

I'm sure people thought we were praying for our game while we were in this huddle.


We had an awesome trip! It was a nice way to start off the year.

- Birthday -

Last night we celebrated Grandma Joyce's 80th birthday.
She is a precious lady. Always has kind words
and sweet remarks to share with you.

My in laws hosted the party. Dad made his famous
spaghetti (the best in the world, no lie!). We had
a great evening with most of the family.

Happy 80th Grandma!
Little Caden had us fully entertained.
He is such a doll and has the cutest voice
and stories.

He had recently had surgery and was telling
us about the nurses and doctors, oh it was to funny.

Love my hunny, and his wonderful family!

Of course Rox had to celebrate too!
She loves to sit on grandma's lap.
I don't think the feeling are mutual though. ;-)




It is Friday!! Thank goodness. This has been a very
long week here at work, and I am looking forward
to having Monday off. YAY, I love court holidays! ;-)
